Today I was experimenting in the kitchen as I had a craving for sweets. Chocolate is a daily thing for me. Sometimes just a square of 70% to snack on and take a way a sweet tooth craving.
Did you know chocolate 70-80% has wonderful nutritional value? Chocolate contains magnesium and powerful antioxidants.
These get the approval from my boyfriend as well! His response when trying them was “good salt and sweet, nice crunch and very satisfying. I like these!”
I’m always looking to create recipes that are about good eating in a healthier way so we don’t feel deprived! Chocolate is a must for me!
RECIPE: Chocolate Mint Protein Balls
Ingredients:
1 cup rolled oats (gluten free)
1/2 cup unsweetened coconut flakes
1/2 cup almond butter or if there’s a nut allergy Sunflower Seed butter
1/2 cup ground flax meal (flax seeds ground)
1/2 cup cacao nibs (in the health food aisle) or non-dairy chocolate chips (Enjoy Life) is a good brand
1/3 cup honey or maple syrup
1 TBSP chia seeds
**1 drop Young Living Vitality Peppermint Essential Oil OR 1 tsp peppermint extract (optional)
Directions:
Combine all ingredients in a mixing bowl. Stir until well incorporated.
Cover & refrigerate for 30 minutes – 1 hour.
When mixture is ready, remove from the refrigerator and form into 1 inch balls.
Store in an airtight container in the fridge for up to 2 weeks. I like to freeze mine so they cool down and hold together well.
This is a perfect, no-bake summer or anytime snack. Great take along for work to keep cravings and trips to the vending machines away.
** Please note: not all essential oils are distilled and bottled for internal consumption. I only recommend using the Young Living Vitality Essential Oils for internal consumption.**
In one 15ml bottle of Peppermint Essential Oil there is one pound of peppermint plant.
